It is very difficult for women to gain muscle when compared to men. The only way you can really gain huge muscles is by going through a high-protein diet coupled with lots of muscle-building exercises (namely, pumping iron).
Can you gain muscles by canoeing? Yes. But you'll never be as muscular as any of your guy friends.
But in the first place, if you want to be strong, you need to have the muscles.
So what is more important to you? Your looks or your strength? If you're concerned about your looks, then you shouldn't be canoeing in the first place. All these intensive outdoor activities are not meant for people who are so concerned about their looks that they're willing to diet and starve for the so-called 'perfect figure'. I know I'm being really harsh on you, bedroom, but's the plain and simple truth.
I'll spell out to you what you need to do if you want to continue canoeing:
E-A-T M-O-R-E C-A-R-B-O-H-Y-D-R-A-T-E-S.
Here's what you need to do if you want to have a (supposedly) thin figure:
