120/60 ZR 15
120 means your wheel width in mm.
60 is expressed as a percentage of your wheel width, it measures the wheel profile, the distance from the rim to the road. also called "aspect ratio". in the above case, your wheel is 72mm thick.
ZR is the speed rating for your tires. it's the max safe operating speed for your tires. ZR is for speeds >240km/h. it comes with a whole range from P to ZR.
15 is the diameter of the rim your tire is meant for.
for your wheel choice, my friend is using mondial for his track mito, friends recommend GPR070 but it doesn't last very long. i'm using battlax, good dry grip, but haven't tried it in the wet yet...
