  start out simple
  
  shi'itake mushrooms.. clean and cut to approx equal size..
  
  a bit of oil in the wok... smash a clove of garlic until it is minced... toss inside the oil and stir it around for a bit... add mushrooms..
  
  stir around for a while..
  
  add beer.. allow to reduce..
  
  delicious!

  cooking takes practice. as for reducing the kitchen mess is a matter of organisation.

  tried that with white wine .. good... i love mushrooms *drool*

  yes.. in singapore, white wine must be drunk.. substitute with beer just as nice

  i miss wine in aus.. in fact i miss the alcohol in aus. soo cheap.. haven't tried mushroom with beer. maybe will do one day.

  we're spoilt rotten.. Tiger is pretty good beer

  ya! i agree. cheap and good alcohol. miss walking into a bottle shop and just pick up a bottle for the night.
  
  i don't like tiger leh.. bland... i don't drink beer
  
  i miss the weather, the air, the sun, the sea, the beach, the people (most not all), the living standards and the cheap alcohol! just to clarify, i use wine and alcohol for cooking.. not drinking
  
  bear.. considering to move to aus? soon or later?

  Bok Choy with Oyster Sauce.
  -blanch bok choy in hot water(put some salt and oil in water) for 2 mins. remove and put on plate. add oyster sause. the end
  
  alternatively, add fragranted oil with the oyster sause. (fragranted oil = oil fried with a) shallots b) garlic c) sesame oil.
