Why dont the SAF consider Investing money in the production and research of Mobile Suits? Ive seen how 1 MS can take down 10 tanks in a single swipe.

SAF is not a profit-oriented business. Only profit-oriented business will be able to truly research and develop new ideas and products, and then sell the end product to the SAF.
SAF, at most, can see what others have, then make some modification, and call it their innovation. For example, airplane and engines were not SAF inventions, but they put together these 2 from different sources and call it SuperSkyhawk.
Sages with great ideas, need the courage to convince investors that his idea will work, and have people pump in money for the production. Do it, sage !
Don't expect SAF to go into this because of 2 sentences in this forum. -
Mobile suits in their form is an impractical form in real-world terms. Mobile Armour, however is a completely different story.
