I only a very vague impression of some of the shows you mentioned.
One more I can think of is the 'Feng Shen Bang �神榜' where Zhou ChuMing acted as the fire deity.

I remember I forced myself to learn the Chen Xiu Huan's hand sign in the show 飞越银河when I was a child. Watching TV was a joy back in those days.
Nowaday the mediacorps TV series (except e show Holland V) cannot make it.
