In this case, I must say, it depends. In Buddhism we don't 'pray', we 'pay reverence', 'pay respect', 'pay homage', but we dont 'pray pray' or 'worship'. Neutral Onliner maybe can post on this.
Many elderly people who pray to Guan Yin also have superstitious set of thinking, and are completely ignorant of Buddhism. What they practise is a form of folkds tradition, but not Buddhism. In fact to become a Buddhist one must first take refuge in the Three Treasures (Buddha, Dharma, Sangha)..

To my understanding Huatuo is known as Shen Yi (loosely translated as God of Physician).
Father of Chinse Medicine should be Shen Nong if I'm not wrong.

Avalokitesvara Bodhisattva does not need to be a male, because Avalokitesvara is still a BODHISATTVA, not yet a Buddha (or rather, the Avalokitesvara Bodhisattva is an ancient Buddha who decided to become a Bodhisattva again).
