The above subject on the relationship between thoughts, awareness and the empty nature of mind is a very profound and interesting subject to read. My belief is that few can put their realization so clearly as above.
Can’t figure out what is described above got to do with needing one meal only or having to do with vegetarianism. Care to elaborate more on your conclusion?

I think many meals or not depend on the person's health, it does not depend on one's enlightenment. For example, Ven Hui Lu does not eat only one meal before noon, he used to do that but now his frail health does not permit it. But there is no doubt he is deeply enlightened.
Dalai Lama eats meat because of health issues... Many Tibetan lamas and Theravada monks who are enlightened are still eating five clean meat.
By the way the author Jackson Peterson happens to be vegetarian and actively promotes vegetarianism and awareness of animal cruelty... he is also an authorized teacher under Ven Hsu Yun's Ch'an lineage. He's a friend of mine. But I don't think he eats only one meal a day, I might be wrong.
On the other hand, I also know many enlightened people who are not vegetarian and eats three meals a day after enlightenment. There is no strict rules on this.
