I could be wrong, but I don't think there are too many hawker centers open at 1 a.m. More importantly, all of [b]HAINANESE CHICKEN RICE restaurants would likely be closed.
My parents used to pick me up at the airport, but they're currently in their 70s and 80s and do not drive anymore.
Vancouver is indeed a beautiful city with a very sizable Asian population and mild maritime climate. I think it would be an ideal city in which to spend one's retirement years. A winter home in the temperate part of the US would not be a bad choice either, but upkeeping two homes can be inconvenient and expensive, especially if both homes are in different countries.
I can see myself moving to the Pacific Northwest (Oregon or Washington) after retirement, assuming those places haven't been overrun by illegal immigrants from the south by that time.

Back in the early 90s, the Bank transferred me out West to Vancouver. However, hubby was resistant to the move. So, I did live there for a while but can't say I enjoy it because was satu orang, missed family in TO. Eventually, transferred back to TO and live happily ever after.
Hence, not really sure retirement will be out west. 
I've got uncles in NJ and Arizona. NJ is out, not trading winter for winter, so perhaps Arizona may be an option. Like you, I did check out Oregon and Washington. Anyways, still another 10 years before we retire. Anything can happen by then, right? -
