Anyway, that Ch U Thursday 9pm show not bad -
watching the cooking show..
1 lobster (crayfish actually.. no claws), chucked in almost boiling water.. allow to come to simmer.. it's cooked...
remove..
pull out head, extract the juices from the head.. put through strainer...
use juices with a huge whack of butter, some truffle oil (a few drops) and some water or white wine.. allow to emulsify...
ready pasta and chives by boiling both...
put cooked pasta and chives in with the cut up lobster and sauce.. stir..
voila! Lobster Pasta! -
FWAH!!!
yellowfin tuna steak!
they just filleted a HUGE yellowfin!
nice...
ginger and shallots over the tuna.. squeeze on the side of the pan.. big red chillis into the pan.. garlic... lemongrass, bashed and cut up.. olive oil..
coriander and mint.. throw into the pan with the tuna...
marinate for 25 minutes..
stick onto the hot barbeque!
just sear the tuna...
yummy!
damn.. i shouldn't be hungry but i am now

I've got two frozen lobster tail in my freezer. Was thinking of stir fry in ginger and scallion. Hmmm.....maybe I'll try the pasta. But is it marinara sauce or chardonnay sauce? -
that's all there is... the huge whack of butter was about a handful which he just squished into the saucepan... it looked about 1/3 of a block!
watching Surf the Menu.. these 2 australian chefs who were based in UK go home and go around...

they're going to cook more tuna..
5 large limes, grated palm sugar, sesame oil (a touch) and some soy sauce, a couple teaspoon of coconut milk...
sliced tuna... thin but huge slices.. into the stuff above.. will just cook by itself
shallots, garlic fried in oil... take out.. drain. mortal and pestle, half teaspoon and sugar... grind it up...
place the "marinate" concoction on the tuna, with some avocado and use some of that oil used to fry the shallots and onions... put a little on the plate..
looks GOOD -
i would say that the subtle flavours of crab would be overwhelmed if eaten with Guinness
what i would say is that LARGE mudcrabs, just steam... goes well with beer...
another way of cooking lobster... into almost boiling water for about 2 minutes...
with a very sharp knife, split right down the middle...
remove the meat of the tail and put in some garlic butter... slice up the half-cooked meat and replace in the tail.. put a little bit more garlic butter, put in grill until cooked

New Orleans mayor said their seafood still edible but not oysters. I wonder if I should stay away from seafood for a while. But if you look at those monsterous sea creatures now, I wonder how much toxin is being dumped into the open waters.

if there's anything from New Orleans, try not to eat the filter feeders.. oysters are filter feeders..
too much sewage.. not good..

Littlestream, how's the hubby doing? Has it gotten cold in Toronto? It's currently 39ºF outside; some parts of northern MN actually experienced a hard freeze last night. But it's expected to warm up into the seventies by the weekend.
Only in MN can one experience all four season in just one week.
In Office News™, the idiot who cleaned the refrigerator in the common kitchen area yesterday, forgot to reset the temperature dial when he was done. The result: the frozen microwavable meals in the freezer thawed overnight, and some food in the lower compartment has gone bad. There's a group of people in the office who want to lynch him right now.

Did you hear about Hurricane Tammy? I think they are going to run out of names. Katrina, Ophelia, Rita and now Tammy. But Tammy won't be heading to the gulf. I think Florida and Georgia. -

Hubby is improving (not 100%) and operates on baby's schedule (early night). Thanks for asking.
I think today may be the last day for us to enjoy summer weather. It will still be high of 26 but dip to teens tomorrow and perhaps the weekend. But know what? Our neighbour province, i.e. Manitoba had snow dumped on them. I wonder how Fatum is doing although he is not in Manitoba but still in the prairies mah.
Oh dear, I think he must have felt bad too. Did you leave anything in the fridge? -
