Those rice that are from PRC are usually short grain... From Thailand are those full grain, simply we call it AAA grade -

personally, I like seafood paella better ...
but try using basmati rice, the long very long grained ones, no matter what the cookbooks tell you to use ... it'll be like eating a nice light and moist Nasi Brani ... -

Discovery Travel and Living had an amazing show once where they showed how this famous beach-side restaurant in Spain cooked their Paella!
They had a huge flat-bottomed pan over a huge fire where they threw in the spices and condiments, cooked the rice, and threw a ton of assorted fresh seafood into it!
Once it's been cooked, with the rice absorbing the delicious, tasty stock, they'd heap spoonfuls onto large plates and serve the customers straightaway! :-P~~~
They cooked their Paella in full view of the customers, in an open-air corner of the restaurant. Man, what an experience it must be to eat Paella there! -
