  cognac has too strong a taste and aroma.. it'll overpower everything

  a few drops huh?
  
  hmm.. but i usually use the beer or wine as the liquid for the sauce... pour enough in it to reduce to a nice tasting sauce... the stuff that vapourises away is the steam and liquid that cooks the mushrooms

  Well, have an opened bottle of cognac just for chicken wings. Chris loves chicken wings with cognac
  
  HP sauce and cognac

  jack daniel's works very well too..

  For fish you need to be worried about pollution and the stuff they feed the fish if it's pond reared
  
  For veggie best go for Organic Non-GMO
  
  You have to be careful here. The veggies can be organic but it doesn't mean they are Non-GMO
