On the subject of char peng, actually hor, it is a dish that will show whether the chef is good or not. Control of the fire (huo hou), skill with the wok etc are all ruthlessly revealed when you try a person's char peng. Simple dish, but the hardest of all to get right unless you have a solid foundation in the basics!

Usually, the stoves at home do not have enough BTU's to garner the same results that you get at the chi char stalls.
Besides, those cooks are pretty strong, the way they are able to hold the woks and toss stuff!
That's quite strenous to do! -

Thing about fried rice is that you need a chinese wok to fry it really well. Those western style frying pans just don't do the job well

they say fried rice must use overnight rice but i prefer rice that's just been cooked and left to cool.
