for the chicken.. the first recipe, they used a rich full-bodied wine.. full of tannin... and use tough chicken.. if possible, the rooster.. the tannin in the wine would permeate the chicken and bind itself to the muscles and causing them to break down a little.. making the flavour of the chicken rich and good texture...
the yogurt chicken.. allow the yogurt to marinate the chicken for about a day, allows the acid to break down the muscles while going into it..
that's the science of the first 15 minutes of the programme
