  well, snapper doesn't easily overcook.. but then, if you don't want to, you can steam it a little and simmer it less too

  seriously, the half-half bit will work too.. coz simmering it may not totally cook it all the way inside as snapper heads are very thick... which is why the steaming is necessary...
  
  cooking it all the way in the curry will cause it to disintegrate as the flesh kinda slides off
  
  best is always to find your own way
  
  i'm not a textbook cook, i'm a hantum cook
  
  rarely measure, all by feel and experience... trial and error.. and lots of error in the past

  another way is the brute force way... again, cleave the head right down the middle
  
  easier to cook but you'll lose a lot of the yummy gooey gunk in the head
