you can use just about any type of fish to make fish and chips...
because afterall its just a deep fried piece of fish...

i dont know what kinda fish you can get at your place, but heck, just get cod. -
Hehehe use Pacific Dory or this other fish......I forgot the name
It's eluding me when I think of it I will tell you. I think Pacific Dory taste so much better as fish and chips compared to Cod, as long as you don't get the fake Dory which is really the Sutchi fillet or whatever they call it.
Oh the fish name that was eluding me is the 'Hoki'
That taste really good fried too
Or you can just stick to red snapper -
