just need a deep bowl,
fill up your bigger saucepan with water,
birdnest put in the deep bowl with rock sugar,
put a small metal rack in your saucepan
semi submerge that deep bowl into the water in the saucepan. at least 3/4 into the water
cover the saucepan and bring water to boil. -

btw, i know you mentioned cannot let birdnest get in contact with metal.
but i still think its quite okay in those digital rice cooker leh. the new cookers has teflon coating.
another way of eating birdnest is to eat it with porridge.
just throw in barley seeds, rice and birdnest into the rice cooker, set it to porridge cooking and cook.
best for when you are going out for work.
then when you get home from work, either dump in some coconut milk and eat. or eat it as it is like a porridge.
if you like sweet porridge, throw in some longans or red dates.
And you got a decent smallish birdnest dinner to come back to.
I believe in eating big breakfast, ultra small dinners. -
