  For this dip, based on the Mexican queso fundido, you will need to use a flameproof dish set over candles or Sterno to keep the cheese melted. Kevin Taylor, chef of Cafe Iguana, Denver, Colorado also offers guacamole with the chips.
  
  serving size
  
  Serves 12.
  
  ingredients
  2 pounds Monterey Jack cheese, grated
  1/4 cup all purpose flour
  1 1/3 cups beer
  1/2 cup chopped fresh cilantro
  4 teaspoons minced jalapeño chilies
  
  Blue corn tortilla chips
  
  preparation
  Place cheese in large bowl. Add flour and toss to coat. Bring beer to boil in heavy large saucepan. Reduce heat to low. Add 1 handful of cheese to beer; stir constantly until cheese melts. Repeat with remaining cheese; stir until thick and creamy (do not boil). Stir in cilantro and chilies. Season with salt and pepper. Pour into flameproof baking dish.
  
  If desired, preheat broiler. Broil cheese dip until top is golden, about 2 minutes. Set dish over candles or Sterno on serving table. Serve with tortilla chips.

  While you're at Vivo, check out their organic supermarket. Quite an amazing range of healthy food! It's atas, so probably will have the cheese you're looking for.

  Continue to stir until cheese has melted and all ingredients are well blended.

  I should think Cold Storage or Jasons Supermarket would have them
  
  Ok I did a search and Cold Storage have Monterey Jack cheese under their 'First Choice' housebrand

  Yep, was there last sat...bought the sushi home to eat. The sushi was nice, with bigger slices of salmon. Will the cheese spoil easily if it takes me 45mins or more to get home?

  Chocolate Fondue
  
  Chocolate Lover's Fondue
  Ingredients:
  2 cups (12-oz. pkg.) HERSHEY'S Semi-Sweet Chocolate Chips
  3/4 cup light cream or half & half
  1/2 cup sugar
  Assorted Fondue Dippers: pound cake pieces, marshmallows, cherries, grapes, mandarin orange segments, pineapple chunks, strawberries, fresh fruit slices
  Directions:
  1, Combine chocolate chips, light cream and sugar in heavy medium sauce. Cook over low heat, stirring constantly, until chocolate chips are melted and mixture is hot.
  
  2. Pour into fondue pot or chafing dish; serve warm with Assorted Fondue Dippers. About 2 cups fondue.
  
  VARIATION: 2 tablespoons kirsch (cherry-flavored liqueur) may be added before serving.

  I only have dried sage...i wonder how much difference in taste there is btn using fresh and dried herbs.
