So yesterday's attempt at slow-cooker Muddy's Irish Stew turned out to be pretty good. I've never tried the lamb stew at MM's (I know, crazy, right?? ) so I didn't know what to expect.
When I went home & peered in the pot, it was more soupy than stewy.
Lamb consomme anyone?
So I simmered it over the stove a little and added some lite sour cream. Which accounts for the lighter color in final product.
Looks abit oily from the cream cos the bowl was sitting there for a while, but it isn't heavy. (And it's "Lite" cream mah hoho )
The stew was good! Hearty and tasty. We finished up everything in a sitting (there was a little more in the pot) .
The problem I have with the recipe is the vagueness - pinch of this and that. Luckily my "pinch" was somewhat accurate because the flavor was well-balanced.
Those who know, does it look anything like the original at all?
