I tried grilling shitake mushrooms and they tasted fantastic.
But when I look back I'm surprised I did not need a bypass surgery there and then when I recall the chunks of margarine the mushrooms absorbed.

If you used margarine, beware of cancer due to the transfat
If it's butter you might need bypass :P

Our body contains enzymes to break down fats into glucose and I-forgot-what. This process releases energy to power our body.
But, the enzymes are specific in the fats each type are designed to breakdown. The word trans refers to cis and trans.
Even if the fat molecule contain the same atoms, if the fat has double carbon bonds, you can have many variants depending on the number of double bonds in the molecule. The number of permutations follow the rule: 2^x, where x refers to the number of double bonds.
The enzymes are specific in what they breakdown and they can only do so with cis-fats which are normally naturally formed. Heat applied when frying will distort the molecule causing it to become a trans-fat by twisting one end of the molecule. The trans-fat will not fit into the enzymes and hence do not break down, that's where you get health problems.
However the body does have means to remove trans-fats by calling upon special enzymes to break them down but this requires time.
