absolutely no clue since i don't take dairy products. i made baked potatoes for NYE - guests can choose between either (or both these fillings): chicken bolognese with onions/garlic or mushroom/leek/onion combos.

Actually why don't you make mashed sweet potato flavoured with a bit of butter
It taste really great too and these days a lot of chefs are shifting towards making mashed sweet potato instead of potato because of the better flavour profile of the sweet potato
It doesn't have to be baked does it???

I mean if there is going to be fillings, it is better to use a normal potato than sweet potato
Russet Burbank would be good
It's large enough and it has a very nice fluffy texture. Flavour is mild enough so that it does not change the taste of yr fillings

In the past we used to be able to pick them in the bush or by the road. But probably because they are considered as weed due to the thorns, they got sprayed. Don't come across them in the wild for a long time. This weekend will be the first time for me to pick blackberries from the farm.
