put a fillet onto aluminium foil, put a shitload of butter on it, add a little dry herb, a slight touch of garlic, fold into an airtight package, pop into oven toaster and let it slowly cook...

not all white fish suits this method....
butter destroys / covers the purer and finer taste of good fish....
