I thought the shark was left to rot? Anyway, i remember visiting a salted fish factory during a site visit - no clue how i survived the nausea-inducing experience!

the shark is actually poisonous if eaten fresh.. so poisonous that people who eat it before it's reached the correct state of decomposition are poisoned so badly that they vomit blood

What kind of shark is that -
it's a greenland or sleeper shark...
some kind of cold water shark... full of some kind of uric acid and dunno what else...

Well it seems to me that fermentation seems to make inedible things edible :PAnd Fugu fermented ovaries are supposed to be very good to eat.
I mean it makes sense because the fermentation should break down the poisonous protein chains or something
