  Can anyone explain why our sai can be hard sometimes, but sometimes can be soft.

  Hard means got fibre. Soft means not much fibre.

  Watery type very smelly
  Soft type also very smelly
  Long and Hard type equally smelly
  Small and Hard type like Stone also Smelly
  Basically all "sai" no matter liquid, solid, semi-solid, soft, hard, long or short all are smelly
