As requested:
(**Actually u can buy the prima deli's chilli crab package and make...it's not bad!)
Main Ingredients - Crabs - washed & cut up
(A)
1 thumbsize ginger - sliced
10 nos. of shallots peel & cut up
4 nos. garlics
6-8 nos. of fresh red chillies
(B)
2 Tablespoons soya sauce
3 Tablespoons tomato ketchup
1 tablespoon sesame oil
2 tablespoon fine sugar
salt & pepper to taste
2 cups of water
(C)
oil
cornflour mixed w/water - for thickening
1 egg - beaten ( for making 'egg-flower' )
dashes of brandy or DOM
sprigs of Chinese parsley
Method :
1) In a blender, blend (A) to fine paste.
2) In a medium bowl, combine (B) together.
3) Put oil in big wok, fry the crabs till the shell gets slight red. Ladle it up and set aside.
4) With some oil left in wok, fry (A) till fragrance and add in (B). Stir.
5) Add cornflour mixture to thicken the gravy. Put the crabs back in again, mix it up to coat with the gravy. Cover & simmer for 2-3 mins.
6) Add dashes of brandy or DOM and slowly swirl in the beaten egg to form the 'egg-flower'. Simmer for 2 minutes, off the stove fire.
7) Dish it up in a large platter and garnish with chinese parsley.
