For (A)
1. Soak rice flour with water(not the water in the ingredient) for 10-20 mins. Use a cloth bag to contain the flour, squeeze the wet rice flour. It should be like a paste. (200 gm flour becomes 300 paste)
2. Soak the dried shrimp. Fry shredded radish and shrimp with oil and Shaoxin jiu.
3. Add 2000 gm of water to the mixture and boil it until the radish is cooked.
4. Add the rice paste to the balance (150 gm) of water. Mixed well. Add the diluted paste to the above mixture. Continue stirring. Mix well. Add all other ingredients in (A). Mix well.
5. Pour into a 9" plate/bowl(must be cleaned and greased). Use strong heat and steam for 1 hour until its fully cooked.
Things to note when preparing (A):
1. When boiling radish, the radish must turn alil translucent. Before steaming, the mixture must be half cooked like a paste. The paste must be place evenly in the steamer. Water amt may be adjusted for different quality of rice.
2. Heat/fire must be high when steaming. Steam around 1 hour to fully cook it.
Once you cooked (A), proceed to (B)
For (B)
1. Add oil to frying pan, add the steam carrot cake,fry and scoop one side of the pan. Add cai po, and prawn. Fry till the prawn turn red.
2. Add 2 scrambled raw eggs into the pan, scoop the carrot cake and cut it into smaller pieces. Sauteed it further until the egg and carrot cake become crispy. Add fish sauce, pepper.
3. Scoop up and add garnish.
