1 kg Lotus Paste 200-250 gm Walnut (toasted and chop)
Methods
1. Cream sugar, shortening, butter, vanilla flavour and ammonium together until slightly white. (slow speed first then change to high speed) 2. Gradually add in egg. 3. Lastly add in sifted flour, custard powder and sodium bicarbonate to knead into a dough. (don’t mix too long) Leave dough in fridge overnight or for a few days. 4. Take out dough from fridge and divide into portions of 30 gm each. 5. Divide fillings into about 40 gm each. 6. Wrap fillings into dough and decorate with walnut. Apply egg wash and bake at 160ºC for 10 mins. Take it out and leave it for about 10 mins and apply egg wash again. Bake for another 15 mins.
Method ? Grind all ingredients together, cook over fire till a dough is formed, leave it to cool
Pastry
- Oil Pastry 500g flour 260g lard Mix evenly, divide into small portions.
- Water Pastry 500g flour 60g sugar 200g corn oil 220g water
Method 1. Mix all the ingredients together, divide into small portions, enclose each portion with 1 portion of oily pastry 2. Roll up and knead the combine pastries, repeat procedure and leave aside for 15 min 3. Divide the dough piece into halves, roll out into circular shapes, enclose each piece with filing. Deep fry in preheat oil for abt 3 min, remove and bake for 8 min @ 180C
Moon Cake Filling „h Red Date Paste Filling ? 800g cooked lotus seed, 300g sugar, 280g oil, 150g red date - Boil lotus seeds and red dates together, add in sugar and oil, mash well, put into a wok and cook till a dough is form
„h Durian Green Bean Filling ? 750g cooked green bean, 360g sugar, 180g oil, 200g durian flesh - Mash all ingredients together, put into a wok, cook till a dough is formed
„h Lotus Paste ? 850g lotus seed cooked, 400g sugar, 400g oil - Boil lotus seed, add in oil and sugar, mash wll, cook till a dough is formed

Mooncake crust
Ingredients: 300g Plain Flour (or Hong Kong Flour) 6 tbsp peanut oil 1/2 tbsp Alkaline water 3/4 bowl Sugar Syrup Method: Mix well and let the dough rest for 1 to 2 hours... Press into the mould and knock the cookie out and place on the tray. Bake for 5 mins, brush it with egg. Then bake for another 10 mins or until it's done.
