1. Remove branchia and intestines, scales and clean the fish thoroughly, steam for 30 minutes at high heat for later use.
2. Heat up wok and add in little amount of oil, saute chopped big onion, ginger and chilli until fragrant. Add in seasoning, bring to boil and pour into steamed fish, sprinkle with shredded spring onion.
