I had a findings why Thai and Indians take Chilli Padi on large dosage heartily
sour can neutralise the Chilli Padi effect hurting our stomachs
that's why Thai use Kaffir Limes and Indians use Tamarinds added to sauces, even if eat large amount also doesn't hurt as much as Chinese and Malay cuisines which don't use them often

Chili doesn't really hurt, coconut milk and cream that makes the stomach turns. Lime does help to temper the hotness, but best if plain rice or dough to put out the fire. Drinking water in super hot case don't help much.

for example, adding 2~3 small dish of fresh chilli padi servings to my noodles churn my stomach
But then when I drink a big White Tom Yum soup, it does not churn due to lime juice

We love chili but have different stomaches. I can't take too much coconut milk, it churns.

Then later travel to nearby Sikkim to enjoy the tea-plantations.
Shortly after I shall travel south to Orissa to visit the Puri Temple
after that, I shall travel to the Andhra Pradesh to try the Puliyogare
then many many places.... until I reach the Nagar and Hunza valleys where I will fall into a dream

My last time in India was in the south. Goa, Chennai, Kenyakumari, Ootys.
Hear there is restriction going into Assam or it is unsafe due to insurgents.

Been there once to India with a friend that speaks good Hindi.
Ootys is high up 8000ft up in the Nilgiri Hills. Not exactly a pleateau but rolling green hills, pretty sight. Famous for the train ride from Combaitore chugging up. It is a welcome change from the heat in the south which can be unbearable.

So that friend who speaks good Hindi is Indian or non-Indian? if it's the latter, I've gotta kowtow the floor with my forehead
I once heard a young Chinese couple speak fluent and very Indianized Hindi with no chinese accent at our airport with their Indian worker (looks like maid)

No my friend is a Chinese. Deccan Pleateau is more in the centre places like Hyderabad.
