Chopping a top off means a loss of chassis rigidity. That rigidity can be regained with thicker welds and reinforcement at other points in the chassis, but that means an increase in weight, easily up to 200+kg more over the coupe model. Add the need for a mechanism to raise the soft top and the weight it adds, and it becomes clear why soft tops GENERALLY fare slightly worse than their equivalent model coupes.
Additionally, having a soft top means top speed is restricted as the eistance of a seam increases air friction, which becomes more notable at higher speeds. Then the added question of having to make a soft top mechanism which can withstand the lift at extremely high speeds, u have car manufacturers choosing to limit the car to a slightly lower top speed anyway, just so the soft top doesn't tear away while blasting along the autobahn.
