If it helps, try driving barefoot at first or use shoes with very thin soles. This allows yr feet to have a more direct tactile sensation with the clutch. Accelerate a bit more.. When you feel your car has some power.. release your clutch a little by little till you see your trip meter drop a little.. that will be your biting point. Concentrate on your clutch pressure instead of releasing the handbrake. I remembered that my instructor asking me do all the individual things (change gear, release handbrake, step and release clutch - engine is off by the way) each for ten mins so that I get so used to them that I can do without thinking. Then do two things together (e.g. change gear and step clutch), then three and so on. Took almost one lesson, but I think it helps. You seem to be lacking confidence. When the car starts to move off, don't panic and let go of the clutch in a jerk. You just hold the clutch at biting point until you can see the car "surging" forward a little and release the handbrake, conciously making sure your leg positions don't move.
