Like all sharingan users, Sasuke is capable of copying all forms of jutsu other than taijutsu (which has to be trained physically although Sasuke has displayed a capability to copy Rock Lee's taijutsu for as long as executing that taijutsu is within Sasuke's physical abilities).
I like to think that Sasuke does not execute kage bunshin (which is Naruto's signature jutsu) simply because (i) he has other more effective jutsu (as exemplified by his victory over Deidara) and (ii) that would mean Sasuke has no better idea as to how to defeat Naruto other than copying Naruto's jutsu. Moreover readers are just sick of seeing kage bunshin day in day out too. Seeing Sasuke's intelligent use of jutsu is sometimes akin to a whiff of fresh air in the world of Naruto.
