  Don't know what I did, the 'My Computer' icon appeared on my DeskTop. I don't want it to be there. How to remove it?

  press delete la.
  then if u wanna restore go to the control panel lo.

  Right click on desktop, Select Properties. Go to the Desktop tab.
  
  Click on Customize Desktop. In the General tab, uncheck My Computer.

  the 1 i have now opens another window showing my desktop...

  Start menu options there one of the options. But I find it redundant because right clicking the taskbar will give me the option to minimise all opened windows already.

  But if evaluate the processes involved:
  
  Your method:
  
  -Have one redundant small icon that clutters your task bar
  -Move pointer to that particular spot at task bar
  -Aim and double click on a small icon
  
  My method:
  -Have no small icon, thus not cluttering my task bar, no quick launch means one less thing to load at startup
  -Move pointer anywhere along task bar
  -Right click and select "Minimize all windows"
