 This is a guest post from one of my clients: Takaokaya. Takaokaya has been making beautifully handcrafted bedding and cushions in Kyoto since 1919. Third generation proprietor, Koichi Takaoka is going to tell us about one of his favorite Kyoto restaurants: Shiawase Gohan. Takaoka-san says: Shiawase Gohan (幸ã�›ã�”ã�¯ã‚“) means happy meal, or happy food. Shiawase Gohan opened about three years ago and owner chef, Nakamura-san, I have known for about 15 years. He was chef at a restaurant a friend introduced me to. I went there for many years and then when he moved onto a new restaurant I followed him there and continued to enjoy his delicious creations — because his dishes are so special! Chef Nakamura trained in Italy for a year and while his dishes are not ‘fusion’, there are surprising elements from Western cuisine in some dishes. Yamaimo Tororo Yaki — This unique dish makes me happy!! Recently, our friend Kwong, a Singaporean architect beautifully renovated a traditional Kyoto ‘machiya’ townhouse and he selected Takaokaya to supply the cushions and bedding for the house. We are very honored. I invited Kwong and our International Business Development Team of Nanako and Michael out for dinner and I decided to take them to Shiawase Gohan. I have been reading Tsunagu Japan‘s articles about Japan, and I am getting the itch to plan a vacation there! There is so much beauty, within their culture, scenery, architecture, and their way of life. There is one thing that fuels my fire when it comes to travel, and that is tasting all of the different foods. Japanese food is much more than cute, it’s absolutely delicious!
Sure, you’ve heard of sushi and rice, but that’s not all that Japan is known for. There are so many unique Japanese foods that I would love to try, the authentic versions in Japan. 3 Mouthwatering Foods To Try In Japan
UNAGI (eel)
“You’re eating EEL?” This was my initial reaction when I learned that propel actually eat eels. Eat eels? Have you seen the face of one? UGH. Anyway, I was completely against all things eel until I unknowingly had some in a sushi roll I ordered. Oh, my, yum. They are freshwater eel that is served in many Japanese dishes and is cooked well. You can eat it in sushi, nigiri, served over rice, or in a salad, or even have an unagi steak.
UDON (noodle soup)
Noodle lovers will flourish in Japan. Udon is one of my favorites, it’s a thick noodle made of wheat flour, which can be garnished in so many ways! One of my favorite styles of udon comes in the form of a hot noodle soup in a miso like broth, covered in vegetables, meat, seafood, eggs, and scallions. This is the perfect warm winter meal, I can just imagine indulging in Japan. Appaernetly there is a chain restaurant calledTsurutontan that has tons of udon combinations. Count me in!
KATSU CURRY (chicken)
This is one of my favorite Japanese dishes. Curry itself is one of the most popular dishes in japan, but katsu curry involves panko breaded chicken cutlets, baked or fried, drenched in curry sauce and oh so delicious! Served over rice and vegetables, katsu curry is a warm, filling meal that will excite your taste buds. It can also be made with pork, but we’re a chicken family. I can’t wait to try authentic katsu curry in Japan! See what other products are made with Japanese curry.

喜多方ラーメン (Kitakata Ramen)
Kitakata RamenLocal ramen from Kitakatashi, Fukushima Prefecture. Refreshing soy sauce flavor. Thick ramen texture.
盛岡冷麺 (Morioka Reimen)
Morioka Reimen
冷麺 reimen means cold noodles. Iwate prefecture delicacy. Noodles are bouncy. The soup is sweet with seasonal fruits such as apple, watermelon and pear. Although it is cold noodles, that does not mean the soup are all direct from the tap. :) It was all boiled and left to cool. Goes well with kimchi.稲åºã�†ã�©ã‚“ (Inaniwa Udon)
Inaniwa Udon
Country-style dish from Akita. Thinner than the Kishimen (flat noodles famous in Nagoya) or Houtou noodles (flat noodels famous in Yamanashi). Smooth texture that glides on your tongue :).
���� (Begi Soba)
Famous in Uonuma, Niigata Prefecture. Noodles are made from a type of seaweed called Funori. The name begi comes from a kitchen tool that is used to make this noodle.

Normally noodles that are made of more than 25% of buckwheat flour are called shinshuu soba. Shinshuu comes from a highland where it is famous for where buckwheat are harvested. Delicacy from Nagano Prefecture.

There are various ways people have this served. Some like the grated radish on top with the soup under (well segregated), while some like it to be all mixed up. Popular among the elderly as a healthy food. Delicacy from Fukui Prefecture.

A mixture of wide-flattish noodle with pumpkin, mushrooms and potatoes simmered in miso soup. Thick soup base. Makes it a very good hot dish in the winter. Delicacy from Yamanashi.

Chicken Namban
This dish is an original Miyazaki creation. First made in the 1960's, it consists of deep-fried chicken, smothered in a dressing made from vinegar and tartare sauce.
Jidori-momoyaki
Only all-natural Miyazaki chickens are used for this food. The chicken is salted, and then grilled over a charcoal fire, creating a crunchy texture and fine aroma. This delicious food is 100% fat free.
Ise ebi lobster
A lot of Ise ebi lobster is caught off the Nichinan coast. It is most delicious when eaten raw.
Miyazaki Beef
Cattle in Miyazaki are raised in spacious, all-natural environments, which ensures a high quality, tender, and delicious meat.
Hiyajiru (cold soup)
Hiyajiru is a traditional Miyazaki food. Its ingredients include fish, tofu, and cucumber. It is best appreciated when eaten with hot rice.
Lettuce-maki
This delicious sushi is made by rolling together shrimp, lettuce and mayonnaise in rice and seaweed. It is another original Miyazaki creation.
Obiten (Obi Tempura)
This is the local food of Obi Castle Town (Nichinan City). It is made by deep-frying mashed fish mixed with soybean paste, brown sugar, and tofu.
Chirimenjako
Small sardines are caught off the Miyazaki coast, boiled, and then naturally sun-dried to produce this food.
Cheese Manju
This is a small, soft, sweet-cream filled cake created in Miyazaki, which has only come onto the market in recent years.
Hyuganatsu Orange
These are Miyazaki-style Japanese oranges. Unlike regular Japanese oranges, the thick white inner skin, as well as the fruit itself are both edible. It has a bittersweet taste.
Shochu
Shochu is an alcoholic drink that can be made from potato, buckwheat, wheat, or corn, and is very popular among the people of Miyazaki Prefecture.
Mango
Miyazaki mangoes are only picked once fully ripe so they are deliciously soft and sweet.

Places to see
The Nichinan Coastline
As you drive along this breathtaking coastal road, and the blue sky and horizon stretches out before you,you'll realize you really are in a tropical paradise.Take some time to stop and smell the flowers at the Horikiri Pass, view the "Devil's Washboard" rocks of Aoshima Island, and throw a clay ball for good luck at Udo Shrine.
Aoshima Island
Aoshima Island is a small island with a circumference of only 1.5 kms. It is surrounded by a rock formation, created by the crashing waves, known as the "Devil's Washboard".There is also a shrine on the Island that attracts worshippers from far and wide.
Obi Castle Town
This was the main castle of the Ito clan during the Edo period (1603-1867).Prior to that time, many battles were fought between the Ito clan and the Shimazu clan, from neighboring Kagoshima, for possession of the castle. The castle's front gate, and the "Matsuo-no-maru" hall have been painstakingly restored, and the stone wall which surrounded the castle during the Edo period still remains.
Udo Shrine
This shrine is located in a cave on a cliff next to the ocean. People come here to pray for long and happy marriages, easy childbirth, healthy children, and safety at sea.
Saitobaru
This is Japan's biggest and best collection of burial mounds. There are 311 mounds, with examples of many different styles, including large key-hole shaped burial mounds, and underground cave-type mounds.
Nishi-no-Shosoin
This building is a replica of the Shosoin Treasure House, built at the Todaiji temple in Nara in the 8th century. Inside are artifacts,such as a bronze mirror, that reportedly belonged to an exiled Korean king who fled across the sea to Nango town.
Shusen-no-Mori
At this theme park, you can try your hand at traditional Japanese industrial arts, and sample shochu, wine, and local beer.
Sun Messe Nichinan
On the top of a hill overlooking the nearby Pacific Ocean stand 7 replicas of the Moai of Easter Island.
Miyazaki City Phoenix Natural Zoo
At this natural zoo you can come face to face with a myriad of animals, both big and small, (there are even Flamingoes), from all around the world.
Heiwadai Park
Standing on top of a hill with a panoramic view of Miyazaki city is a tower which symbolizes peace. Throughout the year there are many flowers in bloom all over the park.
Miyazaki Shrine
This shrine, surrounded by untouched forest, is the site of many festivals throughout the year. The biggest is the "Aki-no-Taisai" festival, held each October. During this festival, there is a big parade of richly decorated "Shan Shan" horses (so named due to the sound the bells they wear make) and people dressed in traditional Japanese clothing, all the way from the shrine to the middle of town.

Aya Town
Aya Town is home to Japan's largest evergreen forest. It has a total area of 1,748 hectares, and consists of evergreen trees such as oaks and camellias.
Takachiho Gorge (Takachiho Town)
This is a V-shaped ravine created by the erosion of lava from Mt. Aso. The area shows its true beauty in the green of early summer, and the red and yellow leaves of autumn.
Ebino Plateau (Ebino City)
Located at the foot of Mt. Karakunidake, Ebino Plateau is surrounded by virgin forest and volcanic lakes, and is the highest place in Kyushu with hot springs.
Cape Toi (Kushima City)
Located at the very South of the Prefecture,this area has long been home to a breed of wild horse known as "Misaki-uma".
Kunimigaoka Cloud Ocean (Takachiho Town)
The summit of this hill is 513 meters above sea level, and has views of both Mt. Sobo, and Mt. Aso. On early-spring and late-autumn mornings, or when there is a big difference between the maximum and minimum daily temperatures, the dramatic Cloud Ocean can be seen.
Umagase (Hyuga City)
Rising vertically 70 meters above sea level, this cliff was so named because of its resemblance to the shape of a horse's back.("Umagase" means "Horse's back" in Japanese)
Sekino-o Falls (Miyakonojo City)
The waterfall is 18 meters above the Shoudai River, and 40 meters wide.Downstream from the falls, it is possible to see many holes of various sizes in the riverbed.

Miyazaki Pref. Art Museum
This Art Museum has a collection of about 2,000 works of art, including Picasso's "Woman with a Velvet Hat on an Armchair, and Pigeon".

Equipped with Japan's largest pipe organ, and the Isaac Stern hall, this Arts Center is among the best in the country.
Miyazaki Pref. Museum of Nature and History
This is a place where you can experience the beauty and history of Miyazaki. On the grounds,a replica of an ordinary 19th Century style house has been constructed.
Miyazaki Science Center
This is a place where you can view the wonders of the universe in the planetarium, and also take part in enjoyable scientific experiments. The Center is due to re-open in May 2004.

Kurobuta（Berkshire Pork）Shabu Shabu
Thinly sliced pork is swished quickly in the boiling water and dipped in sauce to eat. The meal lets you savor the flavor of Kagoshima Berkshire Pork fed on sweet potato.
Shochu Spirits
Shochu distilled spirit is mostly made from sweet potatoes. One can enjoy drinking it on the rocks, in cocktails or with cold or hot water. In Amami Islands, shochu is made from brown sugar taken from sugar cane.
Ramen
A richly flavored soup made from pork bones as well as chicken bones and vegetables, and noodles that are slightly on the thicker side characterizes a typical Kagoshima ramen. It is a hearty, satisfying meal.
Satsuma-age (fried fish cakes)
Satsuma-age is a local delicacy of Kagoshima that is made of fresh fish paste seasoned with distilled spirits called shochu. Traditionally called "Tsuki-age" in Kagoshima, it is highly cherished by people here. There is a great variety of fillings these days that include cheese, sweet potato, and lotus root, among others.
Kuroge Wagyu （Japanese Black beef）
Kagoshima's Kuroge Wagyu was perfected after many improvements made in the local breed. Savor the finely marbled tender flesh and smooth texture.
Tea
Kagoshima, which prides itself as Japan's second largest producer of greentea, is also famous for the earliest first-harvest greentea in the country for its mild climate.
Unagi (freshwater eel)
Kagoshima is the leading cultivation and production region for unagi in Japan. Rich in vitamins A and E, unagi is thought to lower cholesterol levels and to help prevent hardening of the arteries.
Fish
Facing the Pacific Sea and Kinko Bay and blessed with bountiful seafood and other marine resources, Kagoshima offers a rich variety of authentic seafood cuisine such as sashimi, fried fish, and boiled fish that are all characterised by their freshness and excellent taste.
Chicken
Among Kagoshima's most famous chicken dishes are the local traditional Chicken Rice dish of Amami Oshima and the Satsuma Local Chicken cuisine that counts itself among the three greatest local chicken dishes in Japan. You can enjoy chicken on a skewer, as sashimi, or in any other number of original dishes.
Sweets
Japanese confectionaries and Western sweets unique to Kagoshima include Karukan (cakes made from yams, rice powder and sugar), Akumaki (glutinous rice mixed with lye and wrapped in the skin of a bamboo shoot) and Sweet Potato, all tasty souvenirs that are sure to please your friends and family.
Satsuma Cuisine
There is a lot of delicious fruits of the sea and riches of the land in Kagoshima such as Tonkotsu (slowly stewed pork chops) and Satsuma Age (fried fish cake). Needless to say, they are perfect accompaniments to Shochu (distilled spirit made from sweet potato), which has recently become popular.

Introduction
Kagoshima Prefecture is situated in the south-western region of the Japanese mainland. Surrounded by the Pacific Ocean and East China Sea, Kagoshima has a wide expanse of land stretching approximately 600 km from north to south.
Kagoshima is blessed with abundant "Hommono (authentic)" resources - Rich nature such as the World Natural Heritage Yakushima Island, a huge variety of food ingredients such as the Kurobuta pork, Shochu liquor, etc, and a distinct history and culture.
Access
The Kyushu Shinkansen bullet train lines are due to open between Kagoshima Chuo and Hakata, connecting the two cities in approximately one hour and twenty minutes.

The area of Kirishima was the first to be designated as a national park in 1934 in Japan and is one of the most richly diverse national parks. It is a place of scenic mountain beauty where there is a concentration of volcanoes and crater lakes such as Mt. Karakuni （1,700m and the highest）, Mt. Takachiho and Mt. Shinmoe. It is blessed with virgin forests of chinkapin, evergreen oak and red pine, and pristine wilderness, as evident in the song "Hana wa Kirishima （Kirishima is full of flowers）", and in the mountains you can enjoy anything from light walking, hiking to serious trekking. The area is legendary in the ancient mythology of Japan, and you can also see famous sites associated with the legends and traditional performances.

Kagoshima City.
The majestic active volcano Sakurajima rises before Kagoshima City. The city flourished as the castle town of Lord Shimadzu and currently has a population of approximately 600,000. It is continuing to prosper as a major urban area of South Kyushu.
The Kagoshima City Transport Bureau "Welcome Cute Pass" allows unlimited transportation for one single day. The pass may be used for the sightseeing "Cityview Buses" which stop at main tourist spots in downtown Kagoshima.
The Japanese garden created by the 19th lord of the Shimadzu Clan, Mitsuhisa for his townhouse utilizes the views of Sakurajima and Kinko Bay.
From the small hill in the center of the city, you can have a panoramic view of Sakurajima, Kinko Bay and the city.
The former site of the astronomical observatory Meijikan (Alias Tenmonkan). It is now the largest shopping area in South Kyushu.

Museum of the Meiji restoration
A facility where stories about the end of the Edo Period and the Meiji Restoration, and the people involved such as Takamori Saigo and Toshimichi Okubo are told in an easy-to-understand manner using robots and video imagery.
The ruins of a simple Heijo Castle, which was built in the early 17th century by the 18th lord of the Shimadzu Clan, Iehisa in the idea that a castle should be protected by its people.
