i wan ask u huys , have u eaten this Indian vegetarian gravy and how u found it?

Chances are if u eaten at Komala's or eat Thosai, u will have encountered it
It is yellow in colour. Sambar is stew - like gravy with the staple made from dhal grains and tamarind base added with lots of lentils and vegetables, potatoes and the usual spices, slightly sour and oh so aromatic. Yumyum. my favourite
The history of Sambar like other south indian food, dates back to ancient India. it was said to be primarily the food of holy priests and scholars.

My research into this gravy shed light into some exciting findings.
Some tips for u people who dont known much about it. Over the years, people have modified and created new varieties.
There are many types of this gravy namely as the names suggests, that particular vegetable will be a dominant ingredient in the sambar:
The original Sambar and most commmon is Authentic South Indian Dhal Sambhar which is found in Indian food stalls and restaurants. As for the other varities, no guarantee u will find them in food outlets.
the others are:

Drumstick Sambar - usually cooked in homes
2)
Onion Sambar - usually cooked in homes
3)
Califlower Sambar - The Best tasting of all. The King
4)
Carrot Sambar - usually cooked in homes. Sweetish
5)
Ladies finger Sambar - usually cooked in homes
6)
Leafy Green Sambar - common in homes and made with any leafy vegetable
Still there are some others which are not known so much:

Pumpkin Sambar - rare and usually served in places of worship
Chilli Sambar - hot and spicy , usually made in homes

Meat Sambar - Never heard tasted or seen one! Urban Legend?
10)
Bell Pepper Sambar - Invented by Indians in Western countries.
11)
Beet Root Sambar - Rare
12)
Broccolli Sambar - Rare
13)
Tofu Sambar - New & rare invented in Malaysia/Singapore
14)
Mushroom Sambar - Latest new. Not mainstream .
