I love jiao(3) zhi(1) esp. those that are fried. They taste fabulous wif vinegar.
I think good jiao zhi must have the right proportion of the meat and the green vege(I think we call it "cong hua"). The skin must not be too hard or soft. For fried ones, the best comes in the golden-brown crust
