  back to topic:
  
  the aunty in back in my camp used to cook it this way:
  
  1. heat the pan to an insanely high temperature (you could see the heat rising, literally!)
  2. add oil and wait for it till its diabolically hot
  3. crack the egg in a bowl, then slide it onto the pan.
  4. wait for approximately 15-20 secs, turn off the flame
  5. leave it for another 15-20 secs (crisps up the edges).
  6. serve on toasted bread in this order: bread-ham-egg-cheese-bread
  
  i miss AQC's egg ham cheese
