I am very surpised to taste fantastic sgpore food in califonia and vancouver, and its better than I have taste than in sg. But of cos the price is alot higher than in sg. Food should be appetizing and prepared with dedication. There is no reason why the noobs cannot prepare a good dish. All it needs is dedication to improve and sustain the quality. Like the old hands.
Take the Indian mee goreng stalls in kopitiams. The old veteran has gone back to India, and the young apprentice takes over. And he serves slop. He just follow the procedure he is taught, and never improves. And he survives because Singaporeans continue to patronise him.
Same goes to the famous Hokkien mee, Chicken rice, ch'ng tng etc.
Singaporeans don't have good taste.
Its the good ones that should survive.
And the lousy ones should fade away.
I had fantastic North Indian food in London, in one of the Balti line of restaurants. After that experience, I find the Indian food here to be... just curry based, nothing to umm about.
