Sarawak kolo mee
What: These wonton
noodles from Sarawak, Malaysia, are distinguished by their springy,
curly noodles, which do not contain alkaline water. The noodles are
served simply in a fragrant shallot oil sauce.

What: Popular in the Malaysian capital, this variety uses dark soya sauce and
oyster sauce, which coats the noodles in a glossy deep brown sheen.

Pontian wonton mee
What: From Pontian, Johor, in Malaysia, this wonton mee is distinguished by
its noodles, which do not contain alkaline water and are more springy
to the bite compared to conventional egg noodles. Its chilli sauce is
also on the sweet side. Brought in by businessman Harry Ong in 2003,
there are now 14 outlets here.
