The texture of the "Yu Tiao", after deep frying, should not be sticky when chewed.
This has to do with the duration and manner that the dough is prepared, and also to the "Proofing or Fermentation" period that allows the dough to "rest and develop" before frying.
Try the 'Yu Tiao' sold at the Thomson Plaza, just outside the Food Court at Level One.
You will understand what is good "Yu Tiao".
