Just had a gathering at a Eurasian friends home. The lady of the house is noted for her Devil's Curry (Debal's Curry). This is a Eurasian favourite, superhot with a mix of chicken, pork, sausages, veges and whatever. But this time, and others too, I find it below par. Its been a long time since I had good Devil's Curry. And the reason given at all the ocassions for the fall in standard, is that they have visitors or people who cannot "take it" therefore they cut this and that, and modify to suit the taste of their guest. In this case its Japanese. Many other friends who are great cooks also does this to their specialities, like fish head curry, mee rebus, laksa, mutton soup, tom yam etc.
I find this is in vain, as it ruins the dish, people don't like it, and the guest is deprived of knowing what the dish is really like.
They should make it like it should be. Let them know the dish, as it really is. Good, and not the toned down version.
This modification usually happens when there are Ang Mohs or other nationalities guest comming. Pity, they go away tasting something that is not like the original, anyway, they always say "Yeah, Yeah, its good, its good". They don't know anything one.
So, I am not the only one who feels this way.
