"A popiah" is "a popiah" is "a popiah" is.........
The difference is the texture of "popiah skin" - some are dry and coarse, others are light and "smooth".
The other aspect of a "Good" popiah is how the ingredients are packed into the roll - some popiah roll are miserably filled with minimalist amount of ingredient, while the good tasty ones are stuffed with all the best available, and still the popiah skin holds without breaking apart.
