this is what i intend to do.
stir fry black pepper in butter then throw in curry leaves. throw everything on prawns and add salt.
and chefs care to give some comments?
this is if u r using medium to large prawns.
clean prawns by snipping off the feelers and claws from the head.
use a scissors or knife to split the shell along the back, do this from the 2nd shell from the head this will prevent the head from dropping off to the last shell before the tail.
slice open the flesh on the back and remove the vein. rinse in salt water
use good butter, white pepper, black pepper, salt and garlic and stir fry all in a pan.
let the butter cool down till it begins to harden. then spread in the prawn along the sliced back and the sides between the flesh and the shell. this will prevent the shell from sticking on the flesh when u bbq.
skewer the prawns with a satay stick from tail to head. best if u can soak the stick in some oil to preent the flesh from sticking to the skewer.
bbq to perfection. drizzle some lemon juice when done.
