Lamer-Lord's semi-healthy midnight snack.
Bacon and eggs.
Ingredients; 1 packet of back bacon preferably the packet kind from NTUC that is sweet and with the fat already removed.
Tip: Cold Storage bacon gets wrapped in paper and becomes soggy after 2 days. Yuck. NTUC packs its bacon nicely.
2-3 eggs.
Preperation; beat eggs in mixing bowl. Add 1/3 cup of soya milk and 1/3 cup of milk. Mix well.
Cooking:
Fry bacon until brown on both sides.
Tip: Do not burn your bacon or sausages, eating burnt charcoal-crisped meat might give you cancer.
Remove bacon from pan, keep it on medium heat.
Pour egg mix into pan. For extra flavour, add a knob of butter, otherwise just use the bacon fat in the pan.
Technique: Use your rubber spatula to stir the mixture in a clock-wise direction very slowly, peeling off the cooked bits of the egg, until it forms a twirled semi-cooked mixture.
When the mixture becomes slightly more viscous, switch off heat to save energy and continue the stirring motion. The important thing is to not let the eggs get dry.
Serve with bacon.
