They use purple and white (looks white-ish on the outside but it's pale yellow inside) potatoes. By default they will give you the white one, and you can request for the purple one, but the white one is a lot sweeter and more fragrant than the purple one.
Sweet potatoes I prefer to eat them with honey than maple syrup...
.....that's right, they label it "golden". They are from australia, inside dark orange golden colour, much much sweeter and JUCIER than the japanese kind. A bit expensive though.....

If you like sweet nice ones,the orange ones are nice. Nice for porridge and dessert.
