
Sambar is a vegetable stew or chowder based on a broth made with tamarind and toovar dal, and is very popular in the cooking of southern regions of India . The original Sambar and most commmon is Authentic South Indian Dhal Sambhar which is found in Indian food stalls and restaurants.

1) Drumstick Sambar - usually cooked in homes
2) Onion Sambar - usually cooked in homes
3) Califlower Sambar - The Best tasting of all. The King
4) Carrot Sambar - usually cooked in homes. Sweetish
5) Ladies finger Sambar - usually cooked in homes
6) Leafy Green Sambar - common in homes and made with any leafy vegetable
Still there are some others which are not known so much:
7) Pumpkin Sambar - rare and usually served in places of worship
Chilli Sambar - hot and spicy , usually made in homes
9) Meat Sambar - Never heard tasted or seen one! Urban Legend?
10) Bell Pepper Sambar - Invented by Indians in Western countries.
11) Beet Root Sambar - Rare
12) Broccolli Sambar - Rare
13) Tofu Sambar - New & rare invented in Malaysia/Singapore
14) Mushroom Sambar - Latest new. Not mainstream .
