steaming it, cutting into pieces n dipping into ground peanut or coconut shred sounds good n healthy. its simple to prepare too.
but any other ways of preparing it into something novel n tasty?

this is the best way, imo.
Add a yam slice plus the above.
I love it steamed with coconut shred + salt (a little on the coconut itself). You can also use sesame seed instead of coconut
