Bamboo shoots?You mean sugarcane stalks?If ure refering to them,just simply ask the sugar cane stall owner for one,cost about $1++(depends on where you buy them from,i bought mine from a hawker in old airport road FC for that price)...Well eating wise...i used a chopper to get rid of the hard "casing" and chop them up into "bite-size" pieces..chew then spit. Texture-wise is a little like snow pear and sweet(chinese white big pear)
