Generally a healthier alternative to fast food and others - though dunno how popular it'd be in a non kantang state.

hopefully a baked potato setup wouldn't need too many machines.
baked the potato, take care of the ingredients. Not much machine created needed i wouldn't think.
a cart start sounds like a good idea.

Yes it is a nice picture - perfectly steam potatoes and people eating it happily. But the real world is not so.
Rental is expensive- even a cart nowaday cost Thousand dollars - how many potatoes you have to sell per day to pay for rental and your salary.
Steam is time consuming result in lower customer turnover - also it is hot they take longer time to eat it - long turnover of tables. = less business.
How long can your potatoes take to steam ?
After steaming that how long can it be keep at that stage without taste and texture changes ?
You can consider to go for more selection. Serve steamed, mashed, baked and fried potatoes. Come out with your own creation for gravy.
