Type of utensils depends on airline and class of flight... some airlines even have pots and pans for inflight cooking (first class).
Reduced legroom is due to the 80-90s cost cutting measures which the airlines try to squeeze as many heads as possible into one flight.
Asia airline (National) can still charge premium rate... till only recently.
