if you are there on sunday, there is a night market at Tha Phae Gate, where they close the stretch of road for Pasar Malam(cheaper than night bazzar)(only on Sunday night)
You can get food everywhere, but try the Anusan Market, it's a open air hawker center with a few restaurant(air-con). good and cheap seafood
you should try there SongTaew(a covered pick-up or Monkey Car), it's only 10TBH per trip or the tuk-tuk(thrilling but expensive)

No, sometime they don't charge you at all but will bring you to some jewellery shop etc before the destination.
